In addition to pineapple being made into pineapple cakes, pineapple enzymes, etc., pineapple peel residue can also be recycled into xylooligosaccharides that care for the stomach and help digestion. Living in Minxiong Township, Chiayi County, where pineapple is produced, Li Wen-Qian, a professor of chemical engineering at National Chung Cheng University, saw that a lot of pineapple skin waste was always left in the processing of pineapple products, so he used the enzyme invented by biotechnology to decompose pineapple skin residue and make wood. For oligosaccharides, the yield is as high as 22%, which is equivalent to 220 grams of xylooligosaccharides from one kilogram of pineapple peel residue. This technology is currently applying for a patent, which will allow waste pineapple peels to have new uses and reduce environmental pollution problems.
